Open Question: Need help with graphics cards quick!!?

Right, im about to buy a custom built computer tomorrow but i have one problem...
I was speaking to my friend today and he said nvidia SLI gtx580 is only useful for TWO monitors. As i will only be using ONE monitor would it still be better to use the 580SLI or to just get a single gtx590.
